The Contrails Dining Facility held a ribbon cutting ceremony to mark the completion of its seven month renovation, Nov. 14.

The $10 million Food Transformation Initiative enhances menu options for the more than 400 Essential Meal Card Holders and will now be open to all military, dependents, retirees, civilians and contractors.

"Prior to the renovation, the facility usually served around 400 to 450 meals per day," said 1st Lt. Joseph Simms, 9th Force Support Squadron sustainment services officer. "The renovated facility is now open to everyone and will produce and serve more than 700 per day. Any individual who has access to the base can eat at the facility."

The 9th Force Support Squadron and Sodexo, a food services company,  teamed up to promote health and wellness by providing nutritious food, and make operations efficient.

Military food service personnel will prepare food while a Sodexo executive chef oversees the preparation. Sodexo will also train the Air Force chefs to ensure they are certified and meet all culinary goals.

"Military cooks now have the opportunity to become certified Sous Chefs and further their culinary careers," said Tech. Sgt. Corey Simmons, 9th FSS food services section chief.

Contrails now has eight different food stations: Mainline entrée, Mongolian grill, UFood, Deli and Pizza, Salad bar, Grab N' Go and Soup station.
